All depends on your goals, guild, and time. It sounds like you are aiming for pvp and as such, you won't see much benefit in having the fsw set. The fsw set is a pve raiding set which is equivalent to t5 drops. It basically allows you to skip the heroics, grab a few things from kara and gruul, and go straight to 25 mans. Raid progression otherwise is regular instances until you can do heroics, heroics until you can do kara, and kara until you can do ssc or bt.
If your focus is on pvp though, then pvp for gear. There is little gear that you can get in pve that is optimized for pvp. Rather, you should do dailies, quests, etc. for money and pvp for gear.
There is not alot of money to be made in tailoring. My understanding of tailoring is it provides you with a jump start it gives you when you hit 70. Which provides its own challanges. Now I am overgeared for most of the instances I need to do for keys and such. What a predicament!
