I was previously 375 herb/alchemy, dropped herb for tailoring.

You will definitely want tailoring if you plan to do any serious raiding, the FSW and spellstrike will last you until you can get the t5 set.

As for which profession to drop, it's your call. If you intend to earn cash keeping herbing is better. I kept alchemy for my guild and farm dailies for cash.
