i'd go with the double gathering professions route, because in my experience, leveling tailoring while leveling your character isn't as beneficial as making money on the herbs, ores, and leathers that you can gather

as long as you save all or most of the cloth you loot, you can powerlvl tailoring at 70 easily
then again, with the expansion on the way, the tailoring endgame gear for 70 will be less useful than the money you can make from gathering while lvling 70-80
so you might want to take that into consideration
