While I don't have anything to add in regards to professions that hasn't already been said, I'd like to answer your question about RP servers. I play on Feathermoon, and RP server, and it's all right. You don't have to RP all the time, and in fact hardly anyone actually does roleplay all of the time. Usually, you roleplay with your friends, though sometimes you can stumble upon meetings in pubs, or out in the world, and participate.
All-in-all, RP servers aren't bad. However, if I could, I would transfer my warlock to a PvP server, simply because I have a computer that can handle PvP now, and I'm nearing 70, so some world PvP would be fun.
I would not personally recommend PvP servers for newbies, as you'll have to work even harder at leveling when you're constantly running back to your grave.
