Haha, I think doogless got it covered pretty well, but just to show it's not only one man's opinion...
Economy
Yeah, the beta economy is screwed up. People really did come in with 500k gold and dont care how loose they are with it because it'll all be gone in a couple months anyway. I myself copied my character when he literally had 20g on him. Right now I have about 6500g, much because of these people with loose wallets
I made roughly 3000g just from quest reward gold, looted gold, and vendoring all the crap I got from both while levelling 70-80.
Shadow Bite / DP
Insanely useful together. After the downrank "fix", lifetap started getting very, very little mana return, probably around 10% every tap. However, the "fix" along with the change for Dark Pact to return 200% (up from 100%) results in DP currently returning about half my mana. It feels so weird waiting that long to tap, but it's glorious nevertheless. As for Shadow bite's return, while I'm specced full affliction with 2/2 imp puppy, it seems to give the felhunter around 15% of it's mana every bite- I think I saw ~500 mana last time I checked the combat log, but it really seems like more than that, perhaps because it's 500 mana every 6 seconds. In any case, it should be more than enough mana regen in raids (where shadow bite should return even more) and I fully expect to be using my puppy in them.
Metamorph
Yeah, it's pretty useless in PvE. Theorhetically, it'd be useful to use if you usually pull aggro with shatter on CD, since then you might be able to tank. However, alliteration aside, there's no way taking metamorph in your build is going to be as good for DPS as your other options, and then I highly doubt actually using metamorph will improve your DPS at all over having a felguard out and using your standard abilities.
I do see some purpose for it as a defensive PvP ability though. Reduced stun and snare durations would be awesome, and it really is pretty decent against melee classes between the armor, melee abilities, and crazy fire aura. Generally, I think you might be better off with higher damage output talents to take down your opponents before they're able to mess you up, but this really could be the next soul link, especially for undergeared people.
Death Knights
First of all, every one of you must make one and do the few-level initial campaign. It's simply the best collection of quests in the entire game, and the most fun I've ever had levelling. As for their tanking ability, I agree that they're threat seemed pretty decent (possibly even better than my t6 warrior friend), but with significantly less mitigation. I don't remember ever having a DK tank die in the 5-mans I've done, but there've been enough scarey moments that I think they'll be constrained to offtanking / caster tanking in raids.
Professions
I'm tailoring and engineering. Both are kinda weak right now- there aren't any "zomg awesome" BoP epics for either that I've seen. I do however love that engineers can mine mechanicals for a chance at useful parts. There are also enchant-type things engineers can do for people, which should increase its worth in having a decent amount (everybody is going to be running around with rocketed boots and parachute cloaks). Tailors are able to make a better pants enchant for themselves (50 damage and some stats), as well as cloak enchants that actually are useful (chance to do 800-1000 damage, another with a chance to restore mana), but if I recall correctly, these currently can only be put on the tailor's own gear, so there's not much money-making opportunity there. Both have been extremely painful to level up. Right now, I pretty much need 120 cloth and 8 silks to gain a single level in tailoring (think I'm around 410 out of 450), and a ton of metal bars to get anywhere in engineering, which I don't have since I'm not a miner and the bars themselves are not mined out of mechanicals.
And personally, I fully intend to use haunt instead of ruin, but I have no numbers backing my perceptions there either.
