I have been running meta for quick wins to boost rating but now switching to affl/destro. I run both specs and swap when we run into a difficult combination. I was destro against this DK but would like to run against him again using affliction.

You're probably running against a frost dk in frost presence. Depending on whether or not he has unbreakable armor turned on could definitely be ridiculously hard to kill with all that armor.
Frost Presence
The death knight takes on the presence of frost, increasing total health by 10%, armor contribution from items by 60%, and reducing spell damage taken by 5%. Increases threat generated. Only one Presence may be active at a time.
plus being spec'd in frost will allow him even more armor buffs.
30K health? he definitely has to be chanted up the wazoo. I have a dps dk with about 24k health and no enchants and I do in fact have a lot of trouble with locks. Why do you think I made one?
