Malasada - I've just crept over the 1200 mark so I know where you are coming from. I'm running with a shadow priest - not the ideal partner but I'm not looking to rock the world. 
Back to the OP... I think communication, teamwork and strategy play a bigger role than class. Yes you can take two overpowered classes and do well without communication etc. but I don't think it will be fun and it will only last a season before the nerfs.
So... I would say find someone who is on your wavelength and have a blast regardless of the class.
I'm having a much better time with a spriest at 1200 rating than when I ran affliction with a druid at 1700 rating in a previous season...
