While there are immature people (not just kids btw) everywhere, server culture does differ from server to server.
Mal'Ganis for example has a particularly harsh server culture on the alliance side, probably due to it being one of the first servers in the original WOW release. Every other servers I've been on has been a 'nicer' server towards new people.
That doesn't mean I didnt like Mal'Ganis, heck I even returned there after a long stint on as horde on another PVP server. But server cultures DEFINATELY vary as widely as guild cultures do
1) Read the realm forums, you can get a feel for culture there (although there are usually trolls in all realm forums
2) If you find a few realms you like, create some alts, listen to chat at prime time there and see if it suits you
3) If you can move a higher level low level alt to that server like someone who is level 30-40 and ask something innocent in trade and see how people respond to you.

i just hate the Trolls that roam the trade channel. i asked last night if we had a PVP guild on Alleria and i just got bombarded with jokes and insults just because i asked a question. there were a few people at my defense and a few people got reported but it was completely uncalled for. it would be nice if they had a 18+ year old server, no-one under 18 allowed but that would be impossible to regulate. i guess i will just have to suffer for now. lol

I would venture to say some of the people who insulted you were over 18. I don't think the 18+ requirement would suffice to weed out crap as much as you might want it to be so, sadly.
