I used to use Pitbull (when version 3.0 first came out) but I switched to StUF for more customization and less memory usage. I am currently experimenting with LUI v3 (which uses oUF), but as you said, it is very hard to configure (like adding party targets). I may switch back to my old UI's addons, but switch up the layout a bit.
Tooltip addons: They may not seem worth it at first glance, but --- You can see someone's target
- You can see someone's spec
I have used CowTip, TipTac, and TipTop. CowTip eats more resources and is harder to set up. The other two are easy and comparable to one another.
BadBoy w/ Crap Cleaner: Invaluable if you spend any time in cities and hate the flood of gold spammers and the 'anal [link]' tirades.
BindPad: excellent choice if you memorize your keybinds, have a few extra mouse buttons bound, or even want to bind things like 'follow mouseover' and your hearthstone.
