This shouldn't get out-dated (other than the fact that I put level 75 as a minimum for gear to limit the numer of hits...Cat you should probably change it to level 81)

This guide agrees with Wowwiki's Spell Hit page. Here's another breakdown of the math:
26.232 hit rating = 1% hit at level 80. It requires at least 17% hit to never miss a raid boss (level 83 mob) with spells.
So for no buffs or talents (17% rating) 445.944 -> 446
With Draenei in party (16% rating) 419.712 -> 420
With 3 points in Suppression (14% rating) 367.248 -> 368
With Talents and Draenei (13% rating) 341.016 -> 342
W/ Talents & Misery/IFF (11% rating) 288.552 -> 289
With everything (10% rating) 262.320 -> 263

Since every point of hit you have above the cap is a point you could have spent in a more valuable stat, yes. There's no benefit to going beyond a 0% chance to miss.

Hoping someone can help shed some light..

Meta/Ruin spec: My hit ratings about 377 (give or take a point) and we don't have SP/Boomkin in the raid group. My DPS usually ranges between 5k-8k depending on the fight. My fiancee seems to think that even though the hit rating is low, my DPS is fine. I hear that Hit is top gun until cap but will I *really* see higher DPS/damage if I bring my hit cap up closer to 446? It sounds like a stupid question but he's stubborn (and an ele shaman so it's not like THAT takes skill :PP j/k) and seems to think he's still right.

He's wrong. If you bring your hit up to 17%, you'll see benefits. 442 or 443 won't kill you, but 377 is way to low. If you get an SP/Chicken in the raid, then you'll be fine.
