Some gear you cannot wear non-tailor. Check the item description. Spellstrike is an example.

Boots of Blasting should be fine but you can't wear Frozen Shadoweave if you aren't a tailor. You CAN wear Spellstrike but you won't get the set bonus. I'd recommend keeping tailoring. My guess is that Wrath of the Lich King will have another crafted epic starter set similar to Frozen Shadoweave that will be a good way to begin level 80 raiding.

I have been thinking of dropping tailoring myself however I am fairly sure that Wrath of the Lich King will have the same BoP patterns etc that BC had and they are a great kickstart for raiding.
