Soloed everything up to and including the 60 instances strat, scholo, lbrs, ubrs and DM. FG spec both before and after the patch works like a charm, though with Meta most stuff is a total joke now. When soloing stuff that's capable of killing me I do tend to use buff-food (self + pet), pots, oils and in some cases elixirs or even flasks (ie. did strat solo before the patch only fully buffed including a flask).

The Headless Horseman I tried to solo once, but did it with FG instead of VW and overaggro eventually killed me (stupid). If we could have had more tries on him per day I would have tried him more often solo but as it was I didn't want to waste my summons anymore.

I did do SP solo a few times but that was with the pathing tricks and eye of killrog pulling. Never tried it after those "exploits" got fixed.
Did Ramparts once including the first boss and the nasty pull on top of the spiral ramp, but left when asked for a raid and never returned to try it again.

I can confirm all 60 Dungeons are soloable... only tried the 5 mans though... haven't done the raids yet. Though I believe Zul'Gurub should be doable... might try that next.

I've solo'd Undead Strat, Ramparts, and was working on Slave Pens until I started losing my mind waiting for suffering to stay up.

All-in-all, Demo/aff build with VW, PVP gear on (high armor value), Fel Synergy, Demon Armor up = amazing tank.

The downside is that everything takes quite some time as blueberry damage sucks.

When it comes to soloing, I think the spec is the most important part. I'm running a SL/FG build, and it does really well (check my armory page, because it's not a cookie cutter build). The play style is pretty simple, send in your Big Ugly Axe Murderer, and drop a corruption on everything's head, keep health funnel up on him, and fear as needed. Remeber to take it slow, you don't want to pull hate off of him.

So far, here's what I've accomplished with this build.

Solo'd the TK 5man's the other night (Mech, BoT, Arc). Also solo'd everything in the ring outside Shatt. Slabs was a bit of a pain the first time through, but got half way through it on Heroic last night (unintentionally).

Going to give some of old world raids a shot with this build and maybe the first 1 or 2 instances in Northrend.
